THAI CHICKEN MEATBALLS

Ingredients

1 ½ lbs organic ground chicken

2 garlic cloves, crushed

1 ½ tablespoons fresh ginger, grated

4 sprigs green onions, chopped

¼ cup parsley, chopped

½ red bell pepper, chopped

1 tablespoon dijon mustard

1 tablespoon soy sauce (sub coconut aminos)

Salt

Pepper

Method

1. Preheat oven to 425 degrees F and line a baking sheet with parchment paper.

2. In a medium bowl, mix everything together and form into balls ( should be able to make 15 big sized meatballs).

3. Bake for 18-22 minutes, rotating half way through.

4. Serve over rice, with a side of broccolini or any favourite veg!
