Game Day Muddy Buddies
You know I've never made these, let alone had them until just last week. How crazy is that!? But now I understand why everyone loves them so much and why they are insanely addictive. I did a lot of recipe research and I wasn’t surprised to see how much sugar are in these little pockets of heaven so while I was recipe testing them overload you with sugar so I took it down a slight notch, but at no point compromised sweetness of flavour, I promise.
Ingredients
1 box Rice Chex cereal
½ cup white chocolate chips
1/2 cup creamy peanut butter
1/4 cup coconut oil
1 teaspoon vanilla extract
1 ½ cup icing sugar ( or powdered monk fruit sugar)
1 bag peanut M&M (team colours removed)
Method
1. Line a baking sheet with parchment paper and set aside.
2. Dump cereal into a large bowl and set aside.
3. In a small saucepan over low heat, stir together white chocolate, peanut butter and coconut oil until completely melted. Stir in vanilla extract. Pour mixture over cereal, stirring gently and until evenly coated.
4. Pour half of the coated cereal mixture into a large resealable storage bag along with half the powdered sugar and shake well. Spread onto baking sheet and repeat process for the remaining coated cereal.
5. Lastly, stir in M&M’s. If you want to be extra fun , you can take out the blue, yellow, orange and black ones to show your support for both teams.
Recipe Notes
If you aren’t serving them immediately I suggest storing them in an airtight container or resealable bag in your freezer. This will keep them super fresh and will allow them to last a very very long time!
if you want to be sugar conscious, monk fruit is a good alternative. Studies have shown it is one of the safer substitutes out there.
