Crunchy Baked Chicken Strips

Ingredients

Chicken Nuggets

3 large chicken breasts

2 eggs

½ cup cold water

1 tablespoon paprika

1 ½ tablespoons cumin

½ teaspoon garlic powder

1 cup panko breadcrumbs

Olive oil spray

Salt and pepper

Green Yogurt Dressing

1 cup plain greek yogurt

3 sprigs green onions

1 cup basil

3 tablespoons flat leaf parsley

1 tablespoon chives

1 lemon, juiced

1 teaspoon dijon mustard

Salt and pepper to taste

Method

1. Preheat the oven to 400 degrees F and line a baking pan with parchment/baking paper.

2. Season the chicken breasts with salt and black pepper and slice into medium sized strips.

3. Using two shallow bowls, beat the eggs and water in one bowl and add the flour, panko, paprika and cumin in the other.

4. Dip the chicken strips into the water and then dredge them into the seasoned flour.

5. Place each strip onto the baking sheet and spray each side with olive oil and bake in the oven for 10 minutes (on each side). When you flip them half way through, spray them again with a little olive oil.

6. To make the dipping sauce, combine all ingredients into a high speed blender and blend until combined. Serve in a ceramic bowl.

7. Enjoy! Best served hot and with a little extra sauce if you know what I mean.


Recipe Notes

  • if you don’t love spice, you can always swap out the cumin for a little onion powder (½ teaspoon)

  • can also use normal breadcrumbs, doesn’t have to be panko!
